The only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). The brewery hopes to make Sake that can be the best paired with food - a Sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in Sake. The brewery is also quite particular about the ingredients used - the rice is polished very carefully, and a true Kumamoto Yeast is used.
Suigei Ya Junmai Daiginjo has two types of Ginjo aroma, making it one of the most fragrant Junmai Daiginjo brewed by Suigei. The combination of apple and banana produces a new, glossier fruit aroma. This aroma is further drawn out by brewing only with Yamadanishiki Sake rice grown in Toujo district of Toku-A region, Hyogo Prefecture, and polishing it down to 40%.
