This sliced kalbi plate uses Mishima Reserve’s American F1 beef (Wagyu & Angus). Officially known as the short plate, it contains enough marbling such that it stays soft even when it gets cold after cooking, making it ideal for take-out menus. Although it is normally abundant in fat, 20% of fat has been trimmed to ensure a balanced flavor. The package is half vacuumed, and the slices do not stick together when defrosting. It is great in a stir-fry, beef bowls, Yakiniku lunch boxes, and cooking with Sukiyaki sauce are all great options as well.
