Katsuo no tataki is an altered form of sashimi, traditionally served with chopped green onions, grated ginger and topped with ponzu. When preparing for the tataki, katsuo loin (also known as bonito or Skipjack Tuna) are lightly seared over a fire to give it a slightly smoky flavor. Then it is plunged into iced water to stop further cooking, leaving the center raw. This product is flash frozen at an ultra-low temperature of -75F right after being processed, to keep fish fresher than fresh - full of flavor at a top-notch sashimi quality.
