Kinmedai or splendid alfonsino has a very distinctive look for its large golden-eyes and its bright red skin. Kinmedai caught from the Emperor Seamount Chain are larger in size and more fatty. Highly-skilled fishermen use specialized skills to drop the net in the area concentrated with top-quality kinmedai. Freshly caught fish are then flash frozen(-50℃) immediately in the vessel to retain color, flavor, and freshness.
The meat is very tender with minimal small bones which is suitable for almost any method of cooking: sashimi, braising, grilling, steaming and frying.
