Karashi Renkon is a well-known specialty dish from Kumamoto. Boiled lotus roots are stuffed with karashi miso (hot mustard miso paste), battered then lightly deep-fried. The combination of crunchy lotus root and pungent spicy mustard is surprisingly addictive and pairs well with alcoholic beverages.
To use, simply defrost, slice thinly and serve as is.
