Yobuko, Saga Prefecture is famous for their local delicacy –fresh and delicious squid. Traditionally, the fresh squid is first served as sashimi while the squid is still alive, then the tentacles are taken back to the kitchen to fry and serve as tempura.
Yobuko squid is frozen using the CAS (Cell Alive System) technology where each squid is flash frozen at -55°C (-67°F) immediately after it's caught. As ice crystal formation that causes cell damage to food is minimized, the squid retain the beautiful translucent flesh with melt-in-your-mouth texture and delicate sweetness.
